Vegans only use and eat parts of edible plants and fungi. This includes fruits and vegetables, as well as cereal grains, nuts, mushrooms, pulses, seeds, tea leaves, coffee beans, cacao beans, spices, and herbs. Vegans choose not to consume or use foods or products derived from animals. There are many different reasons for this decision but for the most part it has a lot to do with animal welfare, the environment, eco-friendliness, health, and disease prevention.

There is a spectrum of health even in the vegan diet. From raw veganism to junk food veganism you will find a plethora of creative and delicious foods. I try to be more on the end of less processed vegan foods, but sometimes a slice of vegan cheesecake or a bowl of vegan mac-and-cheese calls my name. It's all about balance!
