Try out this great recipe by the very creative Buddhist Chef. Great meal for breakfast in bed for Mother's Day too.



LENTIL & EGGPLANT LASAGNA

Lasagna

My favorite hearty go-to main dish is eggplant lasagna. Eggplants (or in the UK: "aubergines") are such an amazing vegetable and really makes this lasagna special. This dish takes a bit of work, so leave plenty of time to make it and let it cool, but it's totally worth it! Minimalist Baker has a huge library of amazing vegan and gluten free recipes. Great dish for a Christmas dinner.

Potato Soup

This aromatic soup is a unique recipe that can be made into a main or used as a side dish. A very healthy and filling dish that can be easily saved to be used for meal prep to save you time through out the week or eaten right away at a big gathering.
